Is it ok for me to do Metabolic Aftershock on an empty stomach? Also what is best for me to consume after my workout?

Working out on an empty stomach is perfectly fine as long as you are feeling energetic. If you find yourself lightheaded or “bonking” then have something light ideally 1 hour before you work out.

Post workout, having protein within an hour of workout will feed muscles, quicken repair and help build denser tissues.
